Pork And Peppers
Ingredients
1 yellow and 1 green pepper
1 red onion
7 oz (200 g) pork tenderloin
1 clove garlic
6 sage leaves
6 sprigs fresh thyme or ¾ tsp (4 ml) dried
2 tsp (10 ml) olive oil, divided
1½ tsp (7 ml) coarsely ground whole wheat flour
⅔ cup (150 ml) vegetable stock
Salt and freshly ground pepper

Method
Slice the peppers into thin strips. Cut the onion into wedges. Slice pork into thin strips. Finely slice the garlic, shred the sage leaves and chop the thyme leaves.
Heat 1 tsp (5 ml) of the oil in a skillet (frying pan) or wok. Brown the meat on medium heat and set aside.
Heat the remaining oil and lightly fry the peppers, onion and garlic. Mix in the sage and thyme, dust with flour, then stir in the stock. Season with salt and pepper. Cook for 5 minutes. Stir pork in and reheat.
Per serving:- approx. 188 calories 27 g protein, 7 g fat, 8 g carbohydrates
