Potato Wedges With Garlic And Rosemary
Toss the potato wedges in fragrant, garlicky olive oil with chopped fresh rosemary before barbecuing them over the coals.
Ingredients
675g/1½ lb medium old potatoes
15ml/1 tbsp olive oil
2 garlic cloves, thinly sliced
60ml/4 tbsp chopped fresh rosemary
Salt and freshly ground black pepper

Method
1. Cut each potato into four wedges and par-boil in boiling salted water for 5 minutes. Drain well.
2. Toss the potatoes in the olive oil with the garlic, rosemary and black pepper. Arrange on a grill rack.
3. Cook the potatoes on a hot barbecue for about 15 minutes, turning occasionally, until the wedges are crisp and golden brown.
