Cod Fillet With Fresh Mixed-Herb Crust

Use fresh herbs and wholemeal breadcrumbs to make a delicious crisp crust for the fish. Season the fish well and serve with large lemon wedges.

Ingredients

25g/1oz/2 tbsp butter
15ml/1 tbsp fresh chervil
15ml/1 tbsp fresh parsley, plus extra sprigs to garnish
15ml/1 tbsp fresh chives
175g/6oz/3 cups breadcrumbs
4 thick pieces of cod fillet, about 225g/8oz each, skinned
15ml/1 tbsp olive oil
Lemon wedges, to garnish
Salt and freshly ground black pepper

Method

1. Melt the butter and chop all the herbs finely, using a sharp knife. Brush the cod fillets with melted butter and mix any remaining butter with the breadcrumbs, fresh herbs and plenty of salt and freshly ground black pepper.


2. Press a quarter of the mixture on to each fillet, spreading evenly, and lightly sprinkle with olive oil. Cook on a medium barbecue for about 10 minutes, turning once. Serve the fish garnished with lemon wedges and the sprigs of fresh parsley.
