Mediterranean Turkey Skewers
These attractive kebabs can be assembled in advance and left to marinate until you are ready to cook them. Barbecuing intensifies the Mediterranean flavours of the vegetables.
Ingredients
2 medium courgettes
1 long thin aubergine
300g/11oz boneless turkey, cut into 5cm/2in cubes
12-16 pickling onions
1 red or yellow pepper, cut into 5cm/2in squares
FOR THE MARINADE
90ml/6 tbsp olive oil
45ml/3 tbsp fresh lemon juice
1 garlic clove, finely chopped
30ml/2 tbsp chopped fresh basil
Salt and freshly ground black pepper

Method
1. To make the marinade, mix the olive oil with the lemon juice, garlic and chopped fresh basil. Season well with plenty of salt and black pepper.
2. Slice the courgettes and aubergine lengthways into strips 5mm/¼in thick. Cut them crossways about two-thirds down their length. Discard the shorter lengths. Wrap half the turkey pieces with the courgette slices and the other half with the aubergine slices.
3. Prepare the skewers by alternating the turkey, onions and pepper pieces. Lay the prepared skewers on a platter and sprinkle with the flavoured oil. Leave to marinate for 30 minutes.
4. Cook on a medium barbecue or under a grill for about 10 minutes, or until the turkey is cooked and the vegetables are tender, turning the skewers occasionally.
