Fat-Free Saffron Dip
Serve this mild dip with fresh vegetable crudités - it is particularly good with florets of cauliflower, asparagus tips and baby carrots and corn.
Ingredients
15ml/1 tbsp boiling water
Small pinch saffron strands
200g/7oz/scant 1 cup fat-free fromage frais
10 fresh chives
10 fresh basil leaves
Salt and freshly ground black pepper

Method
1. Pour the boiling water into a bowl and add the saffron strands. Leave to infuse for 3 minutes.
2. Beat the fromage frais in a large bowl until smooth. Stir in the infused saffron liquid with a wooden spoon.
3. Snip the chives into the dip. Tear the basil leaves into small pieces and stir them in. Mix thoroughly.
4. Add salt and freshly ground black pepper to taste. Serve the dip with fresh vegetable crudités, if liked.
Cook's Tip:- If you don't have any saffron, add a squeeze of lemon or lime juice.
