Toffee Onion Relish
Slow, gentle cooking reduces the onions to a soft, caramelized relish. It makes a tasty addition to many barbecue menus.
Ingredients
3 large onions
50g/2oz/4 tbsp butter
30ml/2 tbsp olive oil
30ml/2 tbsp light muscovado sugar
30ml/2 tbsp pickled capers
30ml/2 tbsp chopped fresh parsley
Salt and freshly ground black pepper

Method
1. Peel the onions and halve them vertically, through the core, using a sharp knife. Slice them thinly.
2. Heat the butter and oil together in a large saucepan. Add the onions and sugar and cook very gently for 30 minutes over a low heat, stirring occasionally, until reduced to a soft rich brown toffeed mixture.
3. Roughly chop the capers and stir them into the toffee onions. Allow to cool completely.
4. Stir in the chopped fresh parsley and add salt and ground black pepper to taste. Cover with clear film and chill in the fridge until ready to serve.
