Cabbage Slaw With Date And Apple
Three types of cabbage are shredded together for serving raw, so that the maximum amount of vitamin C is retained, making this a crunchy as well as a nutritious salad.
Ingredients
¼ small white cabbage, shredded
¼ small red cabbage, shredded
¼ small Savoy cabbage, shredded
175g/6oz/1 cup dried stoned dates
3 eating apples
Juice of 1 lemon
10ml/2 tsp caraway seeds
For the dressing
60ml/4 tbsp olive oil
15ml/1 tbsp cider vinegar
5ml/1 tsp clear limtey
salt and black pepper

Method
Finely shred all the cabbages and place them in a large salad bowl.
Chop the dates and add them to the cabbage.
Core the eating apples, and slice them thinly into a mixing bowl. Add the lemon juice and toss together to prevent discoloration betore adding to the salad bowl.
To make the dressing, combine the oil, vinegar and honey in a screw top jar. Add salt and pepper, close the jar tightly and shake well. Pour the dressing over the salad, toss lightly, then sprinkle with the caraway seeds and toss again.
VARIATION:- The dried dates in this dish give the salad a faintly Middle Eastern flavour. You could emphasize this flavour by substituting 25-40g/ 1 – 1½ oz pine nuts for the caraway seeds. Dry fry them briefly until golden and then sprinkle over the salad before serving.
