Green Bean Salad
You could make this lovely dish at any time of the year using imported or frozen vegetables and still get a pretty, healthy and unusual salad.
Ingredients
175g/6oz shelled broad beans
115g/4oz French or flat beans, quartered
115g/4oz mange-touts
8-10 small fresh mint leaves
3 spring onions, chopped
60ml/4 tbsp green olive oil
15ml/1 tbsp cider vinegar
15ml/1 tbsp chopped fresh mint, or 5ml/1 tsp dried
1 garlic clove, crushed
Salt and black pepper

Method
Plunge the broad beans into a saucepan of boiling water and bring back to the boil. Remove from the heat immediately and plunge into cold water. Drain. Repeat with the French or flat beans.
Mix together the blanched broad and French beans, the raw inangetouts, fresh mint leaves and chopped spring onions.
Blend the olive oil, vinegar, chopped mint, garlic and seasoning thoroughly, then pour over the salad and toss well. Chill until ready to serve.
