Spring Salad
Ingredients
150 ml/ 5 fl oz olive oil
60 ml/ 2 fl oz white wine vinegar
Salt
1 lettuce
1 bunch spring onions, trimmed
3 tomatoes, sliced
2 hard-boiled eggs, shelled and quartered
1 bunch radishes, trimmed
100 g/ 3½ oz black olives

Serves: 4
Method
Mix together the oil and vinegar and season with salt to make a vinaigrette.
Wash and dry the lettuce, keeping the leaves whole and arrange in a bowl. Add the spring onions, tomatoes, egg quarters, radishes and olives.
Dress with the vinaigrette.
