Moorish Salad
Ingredients
150 ml/ 5 fl oz olive oil
60 ml/ 2 fl oz white wine vinegar
Salt
1 curly endive
170 g/ 6 oz olives stuffed with pimientos
2 tsp vegetable oil
100g/ 3½ oz bacon, rinds removed and diced
Garnish:
Basil leaves

Serves: 4
Method
Mix together the olive oil and vinegar and season with salt to make a vinaigrette.
Wash the endive, discarding the darkest leaves and leave it in cold water to soak.
Heat the vegetable oil and fry the bacon.
