Warm Broad Bean And Feta Salad
This recipe is loosely based on a typical medley of fresh-tasting salad ingredients - broad beans, tomatoes and feta cheese. It's lovely either warm or cold.
Ingredients
900g/2lb fresh broad beans, or 350g/12oz frozen beans
60ml/4 tbsp olive oil
175g/6oz plum tomatoes, halved, or quartered if large
4 garlic cloves, crushed
115g/4oz firm feta cheese, cut into chunks
45ml/3 tbsp chopped fresh dill, plus extra to garnish
12 black olives
Salt and freshly ground black pepper

Serves: 4
Method
1. Shell the broad beans, then cook them in boiling, salted water until they are just tender. Drain and set aside.
2. Meanwhile, heat the olive oil in a heavy-based frying pan and add the tomatoes and garlic. Cook until the tomatoes are beginning to colour.
3. Add the feta to the frying pan and toss the ingredients together for 1 minute. Mix with the drained beans, dill, olives and salt and pepper. Serve garnished with the chopped fresh dill.
