Tuna Croquettes

Ingredients

60 g/ 2 oz butter
200 g/ 7oz flour
225 ml/ 8 fl oz milk
2 medium cans tuna
Salt
¼ tsp grated nutmeg
120 g/ 4 oz dried breadcrumbs
150 ml/ 5 fl oz vegetable oil
1 egg

Method

Melt the butter in a saucepan. Stir in 150 g/ 5 oz flour and gradually add the milk. Bring to the boil, stirring constantly, add the tuna and continue stirring until it breaks up. Season with a little salt and the grated nutmeg, and allow to cool. Reserve.


Beat the egg in a bowl and 1 tbsp of the remaining flour.


Form the tuna mixture into small balls of equal size. Dust with the remaining flour, coat in the egg mixture and roll in breadcrumbs.


In a frying-pan, heat the oil and fry the croquettes in batches over high heat, taking care not to spoil their shape or fry too many at once, as they will stick together. Drain on kitchen paper and serve.
