Ingredients
2 kg/ 4½ lb dogfish, huss or rock salmon
3 garlic cloves
1 tsp paprika
2 tsp fresh oregano
1 tsp cumin seeds
Salt
100 ml/ 3½ fl oz sherry vinegar
170 g/6 oz flour

Method
Ask your fishmonger to clean the fish and cut it into small pieces. Pound the garlic in a mortar, adding the paprika, oregano, cumin seeds and a little salt.
Add the sherry vinegar and mix with 750 ml/ 1¼ pints water. Arrange the fish in a shallow dish, pour over the garlic mixture, cover and marinate for 1 day. Remove, drain, dredge in flour and fry in oil until golden on the outside and cooked through.
