Spaghetti And Anchovy Salad
Ingredients
500 g/ 1 lb 2 oz spaghetti
Salt
1 can anchovies, drained and chopped, oil reserved
2 ripe tomatoes, skinned, seeded and sieved
2 firm tomatoes, skinned, seeded and chopped
2 tbsp capers
100 g/ 3½ oz olives

Method
Cook the spaghetti in plenty of lightly salted boiling water. Rinse under cold running water, drain and reserve.
Add the oil from the anchovies to the sieved tomato and mix. Pour this sauce over the spaghetti and mix well with a wooden spoon. Chill in the refrigerator for 30 minutes.
Just before serving, stir in the anchovies, chopped tomatoes, capers and olives.
