Whole Wheat Crêpes With Plum Compote
Ingredients
4 plums
4 tsp (20 ml/10 g) fresh ginger
Lemon zest
¼ cup (50 ml) dry red wine
Liquid sweetener
1 egg
1 cup (250 ml) low-fat milk
¾ cup (175 ml/100 g) coarsely ground whole wheat flour
½ vanilla bean
Salt
4 tsp (20 ml/20 g) clarified butter, divided
½ tsp (2 ml) ground cinnamon
1 tsp (5 ml) brown sugar

Method
Pit and quarter the plums and grate the ginger. Combine with a small piece of lemon zest and the wine, and simmer on low heat for 15 minutes. Stir in a few drops of sweetener and leave to cool.
Separate the egg and whisk the yolk with the milk. Gradually sift in flour, stirring. Slice the vanilla bean lengthwise. Scrape out the seeds and add with a bit of grated lemon zest to the batter. Let stand for 15 minutes. Stir in a little sweetener. Beat the egg white and 1 pinch of salt until stiff and fold into the batter.
Heat 1 tsp (5 ml) of the butter in a nonstick skillet (frying pan). Pour in ¼ of the batter, enough to coat the bottom, and cook until golden. Flip and cook until golden on the other side.
Make 3 more crêpes and arrange on two plates. Sprinkle with cinnamon and brown sugar and serve with the plum compote.
TIP:- You can also use prunes in this recipe. Soak in the wine overnight, then cook for 10 minutes as described above.
