Crunchy Muesli With Apples And Bananas

Ingredients

1 banana
2 apples
5 tbsp (75 ml/75 g) low-fat yogurt
1 tbsp (15 ml/15 g) butter
½ tsp (2 ml) vanilla
1 tbsp (15 ml) sliced
Almonds or buckwheat groats
4 tbsp (60 ml) rolled oats
A few red currants

Method

Peel the banana and mash with a fork. Core the apples, cut a few small wedges and set aside. Finely grate the remaining apple, skin on or off, and stir into the yogurt with the banana and vanilla.


In a small ovenproof pan or skillet (frying pan), heat butter and stir in sliced almonds and oats. Toast on top of the stove on medium heat, in a moderate (375°F/190°C) oven or under the broiler (grill) until golden, being careful not to burn them. Let the mixture cool slightly, then combine with the fruit-yogurt mixture.


Garnish with currants and remaining apple wedges.
