Fruit Salad With Cashew Sauce
Ingredients
1 small orange
⅔ cup (150 ml/100 g) red grapes
1 small kiwi fruit
1 small red apple
2 tbsp (30 ml) lemon juice
2 tbsp (30 ml) unsweetened cashew butter (health-food stores)
5 tbsp (75 ml/75 g) low-fat yogurt
2 tbsp (30 ml) cashews

Method
Peel the orange, remove white pith and divide into sections, being careful to reserve any juice. Halve grapes and remove seeds. Peel kiwi, halve and slice.
Cut the apple into quarters and core it, then slice into wedges. Immediately immerse these in the lemon juice, stir and remove. Combine the fruit and arrange in small bowls.
Combine lemon juice and reserved orange juice with the cashew butter and stir into the yogurt.
Toast chopped cashews in a nonstick skillet (frying pan) on medium heat. Pour the cashew sauce over the salad. Garnish with additional nuts, coarsely chopped.
