Crostini With Tomato And Anchovy

Crostini are little rounds of bread cut from a baguette and crisply toasted, then covered with a topping such as this savoury mixture of tomato and anchovy.

Ingredients

60ml/4 tbsp olive oil
2 garlic cloves
4 tomatoes, peeled and chopped
15ml/1 tbsp chopped fresh basil
15ml/1 tbsp tomato paste
1 small baguette (large enough to give 8 slices)
8 canned anchovy fillets
12 black olives, halved and stoned
Salt and freshly ground black pepper
Fresh basil, to garnish

Method

1. Heat half the olive oil in a frying pan and fry the whole garlic cloves with the chopped tomatoes for about 4 minutes. Stir in the chopped basil, tomato paste and season with plenty of salt and freshly ground black pepper.


2. Cut the bread diagonally into 8 slices about 1cm/½in thick and brush with the remaining oil. Toast on the barbecue until golden, turning once.


3. Spoon a little tomato mixture on to each slice of bread. Place an anchovy fillet on each one and dot with the halved olives. Serve the crostini garnished with a sprig of fresh basil.

Variation:- Crostini With Onion And Olive Fry 2 large onions, sliced, in 30ml/2 tbsp olive oil until golden. Stir in 8 chopped anchovy fillets, 12 halved, stoned black olives, some seasoning, and 5ml/1 tsp dried thyme. Spread the bread with 15ml/1 tbsp black olive paste and cover with the onion mixture.
