Rolls With Ricotta Cream

Ingredients

⅓ cup (75 ml/80 g) ricotta
1 to 2 tbsp (15 to 30 ml) skim milk
A few drops liquid sweetener
1 small apple
1 tbsp (15 ml) lemon juice
2 whole-grain rolls
2 tbsp (30 ml) pine nuts

Method

Combine ricotta, milk and sweetener. Peel and coarsely grate the apple, sprinkle with lemon juice and stir into the ricotta mixture.


Slice rolls in half and spread with ricotta cream. Coarsely chop the pine nuts and toast in a dry nonstick skillet (frying pan) on medium heat until golden, being careful not to scorch them, and sprinkle over the ricotta.

TIP:- A mild fresh Italian cheese with a soft texture, ricotta is available in whole-milk, part-skim and skim-milk versions that have as much as 16% MF or as little as 5% MF.
