Quark With Pear On Pumpernickel
Ingredients
½ cup (125 ml/100 g) low-fat quark or puréed cottage cheese
1 firm pear
Large pinch ground cinnamon
Salt
2 tbsp (30 ml/24 g) cranberry sauce, not sweetened with sugar
2 slices pumpernickel bread

Serves: 2
Method
Stir the quark until smooth. Halve and core the pear and grate into the quark. Mix lightly.
Season with a large pinch of cinnamon, or to taste, and a pinch of salt. Lightly stir in the cranberry sauce.
Spread on the pumpernickel.
TIP:- Pumpernickel is ideal for your blood glucose. It contains far fewer carbohydrates than other types of bread, yet it is made from valuable whole grains. Although it contains more water and less salt, it delivers important vitamins and minerals. The small pumpernickel rounds are a nice alternative. You can also snack on these between meals when you feel those small hunger pangs.
