Supertoast With Cream Cheese
Ingredients
4 to 5 radishes
¼ cup (50 ml/50 g) low-fat cream cheese
Freshly ground pepper
2 slices whole-grain bread
¼ cup (50 ml/30 g) cucumber
1 tbsp (15 ml) watercress
1 medium tomato

Method
Finely chop the rashes and combine with cream cheese. Season with a little pepper. Add a little water as needed and stir until creamy. Toast the bread slices, let cool slightly and spread with the cheese mixture.
Thinly slice the cucumber and arrange over the cream cheese. Place watercress on top of the cucumber Slices.
Slice the tomato into thin wedges and arrange them on top of the watercress. Season with salt and pepper.
TIP:- To make this even tastier, stir ½ tsp (2 ml) Dijon mustard into the cream cheese. You can also thin the cream cheese with yogurt.
