Honey-Apple Crêpes

Ingredients

¾ cup (175 ml/75 g) coarsely ground whole wheat flour
2 tbsp (30 ml/15 g) all-purpose flour
½ cup (125 ml) low-fat milk
⅔ cup (150 ml) mineral water
Salt
Liquid sweetener
2 tbsp (30 ml) flaked almonds or chopped hazelnuts
2 extra-large eggs
6 tsp (30 ml) oil, divided
1 small apple
2 tbsp (30 ml) lemon juice
1 tsp (5 ml) liquid honey
½ tsp (2 ml) ground cinnamon

Method

Stir together flour, milk, min­eral water, 1 pinch of salt and 2 dashes of sweetener. Let stand for 30 minutes.


Toast almonds in a dry skillet (frying pan) until golden. Stir the eggs into the batter.


Preheat oven to 120°F (50°C). Cook 6 small crêpes. For each, heat 1 tsp (5 ml) of the oil and cook 1/6 of the batter on both sides until golden. Keep warm in the oven.


Core and slice the apple paper-thin and sprinkle immediately with lemon juice. Roll up the crêpes and arrange on a plate. Top with apple slices, drizzle with honey, and sprinkle with cinnamon and toasted nuts.
