Cherry Pudding With Almonds
Ingredients
Oil
Fine dry bread crumbs
4 slices bread
2 cups (about 10 oz/300 g) pitted sweet cherries
2 eggs
2⅓ tbsp (35 ml/30 g) sugar
1¼ cups (300 ml) low-fat milk
1 lemon
1 vanilla bean
2 tbsp (30 ml) chopped almonds

Method
Oil a small ovenproof dish and coat with bread crumbs. Cut the bread slices into thirds and lay 4 pieces in the bottom of the dish. Top with ½ the cherries, then lay in 4 more pieces of bread, the remaining cherries and the remaining bread.
Combine the eggs, sugar and milk. Finely grate the lemon zest and squeeze out the juice. Slice the vanilla bean in half lengthwise and scrape out the seeds. Add the vanilla seeds, lemon zest and lemon juice to the custard mixture. Pour over the pudding and leave to soak for 5 minutes.
Preheat oven to 400°F (200°C). Sprinkle chopped almonds over the pudding and bake for 45 minutes.
