Exotic Stir-Fry
Ingredients
8 oz (250 g) fish fillets: salmon or cod
¼ cup (50 ml) fish or vegetable stock, divided
Freshly ground pepper
½ cup (125 ml/100 g) basmati rice, or a mixture of brown and wild rice
½ lime (organic preferred)
1 tbsp (15 ml) olive oil
1 green chili pepper
1 red pepper
1 cup (250 ml) unsweetened coconut milk
2 tbsp (30 ml) finely chopped coriander leaves
2½ tbsp (37 ml) peeled and finely sliced fresh ginger

Method
Cut the fish into bite-size pieces. Combine with 2tbsp (30 ml) of the stock and a pinch of pepper. Marinate in the refrigerator for 20 minutes.
Prepare the rice according to package directions.
Grate the lime zest and squeeze out the juice. Finely dice the chili and slice the red pepper. Heat the oil in a skillet (frying pan) and stir-fry the peppers on medium heat for 2 to 3 minutes, until tender-crisp. Stir in the coconut milk, ginger, lime zest and fresh coriander, and cook briefly to blend. Carefully stir in the fish and remaining stock, and cook for 3 to 4 minutes.
Pour the fish mixture into a bowl, remove the ginger and squeeze on 2 tbsp (30 ml) lime juice. Serve over the rice. If desired, garnish with rings of red chili, chopped fresh coriander and lime leaves.
