Open-Face Turkey Breast And Remoulade Sandwich
Ingredients
1 hard boiled egg
2 tbsp (30 ml/30 g) low-fat sour cream 3 tbsp (45 ml/20 g) finely chopped gherkins
½ tsp (2 ml) medium mustard
1½ tsp (7 ml) finely chopped mixed fresh herbs, such as chives, parsley, dill, chervil
1 thick apple wedge
Worcestershire sauce
Salt
Liquid sweetener
2 slices (3 oz/85 g) whole-grain bread
2 tsp (10 ml/10 g) margarine
2 slices skinless boneless turkey breast
2 lettuce leaves

Method
Peel and finely chop the hard-cooked egg. Mix about ½ with the sour cream, gherkins, mustard and herbs in a small bowl. Finely grate approximately 1 tsp (5 ml) of the apple and add to the remoulade. Slice the remaining apple, cut into small pieces and set aside. Season the remoulade with a dash of Worcestershire sauce, salt and sweetener.
Spread margarine on the bread. Place a lettuce leaf on each slice and cover with a slice of turkey.
Arrange remoulade on top and garnish with the remaining finely chopped hard boiled egg and the apple pieces.
