Cheese Sandwiches
Ingredients
12 slices slightly stale bread
200 ml/ 7 fl oz milk
6 slices cheese, e.g. Mozzarella
1 egg, beaten
Oil for frying
Sauce:
60 g/ 2 oz butter
60 g/ 2 oz flour
450 ml/ 15 fl oz milk
Salt
Freshly ground black pepper
¼ tsp grated nutmeg

Serves: 4
Method
Soak the bread slices briefly in the milk and pat dry. To make the sauce, heat the butter in a saucepan, stir in the flour and gradually add the milk. Simmer for 10 minutes. Remove from the heat and season with salt and pepper and stir in the nutmeg.
Spread some of the sauce on one side of each piece of bread and top with a slice of cheese. Use another slice to close the sandwich. Coat in beaten egg and fry in plenty of very hot oil.
