Cheese Fritters
Ingredients
Freshly ground black pepper
¼ tsp grated nutmeg
75 g/ 2½ oz flour
2 eggs
1 level tsp fresh yeast
60 g/ 2 oz mature cheese, grated
Oil for frying

Method
Heat the milk, butter, salt, pepper and nutmeg in a saucepan. Bring to the boil and immediately remove from the heat. Add the flour all at once and stir vigorously with a wooden spoon until the dough leaves the sides of the pan. Allow to cool a little.
While still warm, stir in the eggs, one at a time. Add the yeast and the grated cheese and allow to rest.
Pipe the mixture, cutting it to make short, fairly thick fingers, into a frying-pan of very hot oil. Fry until golden, remove, drain on kitchen paper and serve warm.
