Caribbean Salad
Ingredients
200 g/ 7 oz fresh pineapple
2 tomatoes, finely sliced
1 lettuce
200 g/ 7 oz sweetcorn
4 tbsp mayonnaise
2 tsp tomato purée
Sprig parsley

Method
Peel the pineapple carefully, slice and then cut into evenly sized pieces, discarding the hard core but reserving the green top. Arrange all the ingredients, except the mayonnaise and tomato purée, on a serving dish, using the pineapple top as a decoration. Blend together the mayonnaise and tomato purée and use to dress the salad. Garnish with the parsley sprig.
