Salt Cod Omelettes
Ingredients
450 g/ 1 lb salt cod
2 onions, peeled and finely chopped
2 tbsp butter
2 garlic cloves, peeled and finely chopped
2 eggs, beaten

Method
Soak the salt cod pieces for 24 hours, changing the cold water at least 3 times. Squeeze dry, skin, bone and shred the fish.
Sauté the chopped onions in the butter until lightly coloured. Add the garlic. Stir in the salt cod and cook, stirring, for about 10 minutes. Add the eggs to make the omelette.
As soon as it is cooked, remove and cut into small pieces and serve on cocktail sticks. Alternatively, serve whole, garnished with strips of pepper, if liked.
