Carrot-Raisin Salad
Ingredients
¼ cup (50 ml) apple juice
1 tbsp (15 ml) raisins
3 medium carrots (about 1¾ cups/425 ml/300 g)
1 apple
Juice of ½ small lemon
1 tsp (5 ml) walnut oil

Method
Heat the apple juice and soak the raisins in it for 15 minutes.
Peel carrots and grate finely. Peel, halve, core and finely grate the apple. Combine with the carrots.
Stir the lemon juice, walnut oil, raisins and apple juice into the carrot-apple mixture.
TIP:- You can make this Carrot-Raisin Salad more exotic by using orange sections instead of grated apple. Soak the raisins in orange juice and season the salad with a mild curry powder.
