Ginger-Pear Granita
Ingredients
1 lemon (organic preferred)
½ tsp (2 ml) grated fresh ginger
1 tsp (5 ml) fructose
¾ cup (175 ml) water, divided
1 ripe pear
Finely grated bittersweet chocolate
Lemon wedges

Method
Use a zester to remove the lemon peel in thin strips. Cut into shorter lengths, if necessary. Squeeze out the juice.
In a small saucepan, bring lemon zest, ginger, fructose and ½ cup (125 ml) of the water to a boil. Simmer, uncovered, on low heat for 10 minutes, until syrupy.
Peel, core and slice the pear and combine with 2 tsp (10 ml) lemon juice and the remaining ¼ cup (50 ml) water in a small saucepan. Cook, covered, on low heat for 8 minutes.
Strain the lemon-ginger syrup through a fine-mesh strainer into a medium-sized metal bowl and leave to cool, covered, for 40 minutes.
Using a fork, crush the pear slices and stir into the syrup. Place the bowl in the freezer for 2 hours. Stir occasionally to prevent large ice crystals from forming.
Spoon into two glasses. Garnish with a bit of chocolate and lemon wedges and serve.
