Banana-Black Walnut Muffins
Ingredients
Makes 5 to 6 extra large muffins or 10 to 12 small muffins
1 ½ cup flour
¾ cup sugar
½ cup black walnuts coarsely chopped
1 ½ tsp baking soda
¼ tsp salt
½ cup canola oil
1 large eggs
2 or 3 medium to large bananas (very ripe) slightly mashed to yield 1 ½ cups
3 TB buttermilk
Method
Preheat the oven to 375. Grease muffin tins.
In a bowl, stir together the flour, sugar, chopped walnuts baking soda and salt. In another bowl whisk together the oil, egg, mashed bananas and buttermilk until blended.
Add the dry ingredients and beat well until evenly combined and creamy.
Spoon the batter into each muffin cup, filling it level with the rim of the cup.
Make until golden, dry and springy to the touch, 20 to 25 minutes.
