Black Walnut Banana Blueberry Muffins
Ingredients
1 x 8 oz. pkg. cream cheese softened
1 cup sugar
¼ cup butter-flavored Crisco
1 cup mashed ripe banana
2 eggs
2 ¼ cups of all-purpose unbleached flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 cup chopped black walnuts
1 cup fresh blueberries
Method
Combine cream cheese, sugar and Crisco, mixing until well blended. Blend in bananas and eggs. Add combined remaining ingredients, mixing just until moistened. Pour into greased and sugared muffin pan. Bake at 350 degrees for 25-30 minutes. Cool 5 minutes; remove from pan.
