Chewy Black Walnut Craisin Cookie

Ingredients

Makes 4 ½ to 5 dozen cookies

1 cup butter softened
1 cup packed brown sugar
½ cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoon ground cinnamon
1 teaspoon baking soda
¼ teaspoon salt
3 cups oatmeal
¾ cup chopped black walnuts
¾ cup dried cranberries (craisins)


Method

Pre-heat oven to 350°F.
In a large mixing bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, cinnamon and baking soda; gradually add to creamed mixture, beating well after each addition. Stir in oats, walnuts and craisins.

Drop by rounded teaspoonfuls 2-inch apart onto ungreased baking sheets. Bake at 350°F for 10-12 minutes or until browned. Let stand for 1 minute before removing to wire racks.
