Vegetables In Spicy Sauce

Ingredients

2-3 tablespoons vegetable oil
1 cake tofu, cut into small cubes
½ teaspoon minced garlic
2 shallots, sliced
1 tablespoon curry powder
2 tablespoons soy sauce
1 tablespoon chopped lemon grass
1 tablespoon chopped fresh root ginger
1 teaspoon chilli sauce (optional)
250 ml (9 fl oz/1 cup) coconut milk
½ teaspoon salt
1 tablespoon sugar
2 small carrots and 1 onion, sliced
115-175 g (4-6 oz) cauliflower flowerets
225 g (8 oz) green beans, trimmed and cut in half
2 firm tomatoes, cut into wedges

Method

Heat oil in a wok or large fry-pan and fry the tofu until browned on all sides. Remove and drain. Stir-fry the garlic and shallots in the same oil for about 1 minute, then add curry powder, soy sauce, lemon grass, ginger and chilli sauce, if using, and continue cooking for a further 1 minute. Add the coconut milk, salt and sugar and bring to the boil.


Add the carrots, onion, cauliflower, beans and tofu and stir-fry for 3-4 minutes, then add the tomatoes. Blend well and cook for a further 2 minutes. Serve at once.

Variation:- For non-vegetarians, either fish sauce or oyster sauce can be used instead of soy sauce for this dish.
