Fish Fillets With Zucchini (Courgette) And Tomatoes
Ingredients
8 oz (250 g) red snapper or salmon fillets
2 tbsp (30 ml) lemon juice
Salt and white pepper
Ground coriander seeds
½ bunch basil
1½ zucchini
1 onion
4 tomatoes
2 tbsp (30 ml) freshly grated
Emmenthal cheese

Method
Cut fish into pieces. Sprinkle with lemon juice and season with salt, pepper and ground coriander.
Chop the basil and coarsely grate the zucchini. Chop the onion and slice the tomatoes.
Preheat the oven to 325°F (160°C). Mix ½ the basil with the zucchini and place in a greased gratin dish. Season with salt and pepper. Arrange the fish, onion and tomatoes on top. Sprinkle with cheese and bake in the preheated oven for 30 minutes, or until fish is golden and cooked. Garnish with remaining basil and serve.
TIP:- A whole-grain baguette and tossed salad go well with this meal.
