Grouper With Orange

Ingredients

2 grouper or other firm fillets, about 5 oz (150 g) each
1 small orange (organic preferred)
1 onion
Salt
1 fennel bulb
1 green (spring) onion
2 tbsp (30 ml) sour cream
Freshly grated nutmeg
Freshly ground pepper

Method

Grate a little zest off the orange and squeeze out the juice. Chop the onion and com­bine with the orange zest and juice and ½ tsp (2 ml) salt. Coat both sides of the fish in this mixture, cover and marinate for 30 minutes.


Halve the fennel and slice finely. Slice the green onion in half lengthwise and julienne. Blanch both in boiling water for 1 to 2 minutes, then plunge into ice water and drain.


Preheat the oven to 350°F (180°C). Layer the blanched vegetables in a greased gratin dish. Combine the sour cream and 2 to 3 tbsp (30 to 45 ml) of the marinade and spread over the vegetables. Lay the fish on top and season lightly with nut­meg and pepper. Bake in the preheated oven for 15 minutes, drizzling occasionally with orange marinade. Serve imme­diately with the cooked vegetables on top of the fillets.
