Apple-Raspberry Jelly
Ingredients
1 (¼ oz/7 g/1 tbsp) envelope unflavored gelatin
1½ cups (300 ml) apple juice, divided
1⅔ cups (400 ml/200 g) fresh or frozen raspberries
1 tbsp (15 ml) mint tea

Method
Pour gelatin over ¼ cup (50 ml) of the apple juice. If raspberries are frozen, thaw and drain.
Combine mint tea and remaining 1 cup (250 ml) of apple juice, bring to a boil, then strain through a coffee filter. Dissolve the gelatin in the hot mixture. Stir in ½ of the raspberries. Pour into two cone-shaped or other decorative molds and refrigerate for 4 hours.
Dip the molds briefly into hot water and turn the jelly out onto two plates. Garnish with the remaining berries and a few mint leaves and serve.
