Orange-Leek Salad

Ingredients

1 small leek
2 oranges
Juice of 1 lime
3 tbsp (45 ml/40 g) low-fat yogurt
1 tsp (5 ml) walnut oil
2 tsp (10 ml) mild curry powder

Details

Serves: 2


Method

Clean the leek, slice lengthwise and wash thoroughly. Slice the white and light green parts into thin strips.


Peel the oranges and remove the white pith. Combine orange sections with the leek.


Combine the lime juice with the yogurt and walnut oil. Season with curry powder. Arrange the oranges and leek on plates, drizzle with dressing and serve immediately.

TIP:- On hot days, if you don't have much of an appetite, or if you want something light at the office, create a balanced meal by eating this salad with a slice of wholegrain bread and a protein-rich dessert.
