Lettuce Salad With Croutons
Ingredients
2¼ cups (550 ml/125 g) mixed lettuce leaves
2 tsp (10 ml) apple juice
½ cup (125 ml/100 g) low-fat yogurt
3½ tsp (17 ml) cider vinegar
Salt and freshly ground pepper
1 small red onion
2 slices wholegrain bread
1 tsp (5 ml) olive oil
1 small clove garlic

Method
Combine the apple juice, yogurt and vinegar in a small bowl and stir until smooth. Season with salt and pepper. Finely dice and stir in the onion. Tear the lettuce into bite-size pieces.
Remove the crusts from the bread and cut into cubes. Heat the oil in a small nonstick skillet. Peel and crush the garlic and lightly sauté to flavor the oil. Add bread cubes and brown lightly.
Arrange the lettuce on two plates, drizzle the dressing on top and garnish with croutons. Serve immediately.
