Kohlrabi With Grainy Mustard Dressing
Ingredients
1 cup (250 ml/300 g) peeled, grated kohlrabi
1 tbsp (15 ml) sunflower seeds
½ handful fresh chervil
4 to 5 lemon balm leaves
¼ apple (30 g)
½ cup (125 ml/100 g) low-fat yogurt
1 tsp (5 ml) grainy mustard
Herbed salt

Method
Toast the sunflower seeds in a dry nonstick skillet on medium heat until golden. Leave to cool on a plate.
Finely chop the chervil and lemon balm, and combine with the grated kohlrabi and sunflower seeds. Finely slice the apple and arrange on two plates. Top with kohlrabi mixture.
Combine yogurt and mustard in a small bowl and season with 2 pinches of herbed salt. Drizzle over the salad.
