Raisin Scones

Ingredients

2 cups (500 ml/250 g) coarsely ground whole wheat flour
1 tsp (5 ml) baking powder
1 tbsp (15 ml) sugar
Salt
¼ cup (50 ml/50 g) margarine
½ cup (125 ml) cold low-fat milk
3 tbsp (45 ml/20 g) raisins
Milk for glazing

Method

Combine the flour with the baking powder, sugar and a pinch of salt. Lightly mix in the margarine. Create a well in the center of the dough, pour in the milk, and knead lightly. Wash the raisins in hot water, blot dry, chop finely and knead into the dough.


Preheat the oven to 325°F (160°C). On a floured sur­face, roll out the dough to a thickness of ½ inch (1 cm). Cut out 3-inch (8 cm) circles. Arrange on a baking sheet cov­ered with parchment paper and brush with a little milk. Bake for 15 minutes, until golden.
