Blueberry Muffins
Ingredients
⅓ cup (75 ml/75 g) margarine
¼ cup (50 ml/50 g) sugar
Liquid sweetener
2 small eggs
½ tsp (2 ml) vanilla
Pinch salt
1¾ cups (425 ml/220 g) coarsely ground whole wheat flour
2 tsp (10 ml) baking powder
¾ cup (175 ml/180 g) buttermilk
1¼ cups (300 ml/170 g) blueberries

Method
Preheat the oven to 325°F (160°C). Line the cups of a muffin tin with paper cups.
Beat margarine and sugar together until fluffy and light. Stir in a few dashes of sweetener, the eggs, vanilla and salt. Combine the flour with baking powder and stir into the batter alternately with the buttermilk. Gently fold blueberries into the batter.
Spoon into muffin cups and bake for 20 to 25 minutes.
TIP:- You can use frozen blueberries. Thaw and drain before folding them in.
