Chocolate Chip Meringue Cookies
After placing these cookies in a preheated oven, the heat is turned off and you "forget" about the cookies being there for the next 8 hours. It is hard to believe this technique could produce such sweet little gems.
2 large egg whites, at room temperature
⅛ teaspoon coarse salt
¾ cup Splenda
1 teaspoon vanilla extract
¾ cup Zero-Carb chocolate chips
Preheat oven to 350 degrees F. Line a baking sheet with a piece of aluminum foil. Set aside.
Place the egg whites in the mixing bowl of an electric mixer and beat on medium-high speed until foamy. Add the salt and blend. Gradually add the Splenda and beat until stiff. Fold in the vanilla and chocolate chips. Drop rounded teaspoonfuls of egg-white mixture onto the prepared baking sheet, 2 inches apart. Place the baking sheet in the oven. Turn off the oven heat. Leave the cookies in the oven for 8 hours or overnight, but be certain not to open the oven door during this time.
