Arugula Salad With Melon
Ingredients
1 bunch (150 g) arugula
2 oz (60 g) smoked ham, rind removed
½ Galia, honeydew or other melon
Salt and freshly ground pepper
2 tsp (10 ml) walnut oil
2 tbsp (30 ml) white-wine vinegar
2 tbsp (30 ml) chopped walnuts

Method
Wash, stem and drain the arugula. Cut ham into thin strips.
Remove the seeds from the melon with a spoon and shape the flesh into balls with a melon baller. Combine melon balls, ham and arugula, and toss lightly.
Stir salt, pepper and walnut oil into the vinegar.
Arrange the salad on plates, drizzle the dressing over top and leave for the flavors to mingle. Sprinkle with walnuts and serve.
TIP:- When you're buying melons, take a good sniff. A fully ripe melon should smell sweet.
