Light Potato Salad With Snow (Mange-Tout) Peas

Ingredients

2 firm potatoes (300 g)
1¼ cup (300 ml/100 g) snow peas
3 tbsp (45 ml/40 g) low-fat yogurt
1 tsp (5 ml) mustard
2 tsp (10 ml) pumpkin seed oil
3 tbsp (45 ml) vegetable stock
Salt and white pepper
½ bunch radishes
2 tbsp (30 ml) pumpkin seeds

Method

Boil the potatoes for approximately 20 minutes in a little water. Drain, leave to cool slightly, peel and slice.


Slice the snow peas diagonally into thirds. Steam or boil briefly (not more than 5 minutes) in a little salted water. Drain well.


Whisk together yogurt, mustard, oil, stock, salt and pepper. Slice the radishes and lightly toss with the potatoes and peas. Sprinkle with pumpkin seeds and serve.
