Exotic Rice Pudding
Ingredients
1 cup (250 ml) low-fat milk
½ cup (125 ml) unsweetened coconut milk
1 (4-serving/120 g) package rice pudding mix
1 small papaya
1 vanilla bean
1 pineapple or 1 (19-oz/540 ml) can pineapple pieces
2 bananas

Method
Combine milk and coconut milk and bring to a boil. Add the rice pudding mix and cook, uncovered, on medium heat until sauce begins to thicken, about 10 minutes.
Scoop out the papaya seeds. Peel and slice finely. Slice the vanilla bean lengthwise and scrape out the seeds. Chop the pineapple and slice the bananas.
Combine vanilla seeds, papaya, pineapple, banana and stir into the pudding.
TIP:- This can be served as a sweet main dish.
