Pimiento Pasta
A quick store-cupboard recipe for a last-minute supper surprise.
Ingredients
350g/12oz dried spaghettini
Dash of olive oil, plus 30ml/2tbsp
2 cloves of garlic, crushed
400g/14oz can red pimiento, thinly sliced
Salt and freshly ground black pepper
Freshly grated Parmesan cheese, to serve (optional)

Method
Bring a large saucepan of water to the boil and add the spaghettini with a dash of olive oil. Cook for about 10 minutes, stirring occasionally, until tender. Drain and return to the saucepan. Set aside, covered, to keep warm.
Heat the remaining olive oil in a frying pan and add the garlic and sliced pimiento. Stir-fry for 3-5 minutes, then tip into the warm spaghettini. Stir to combine. Serve with a little freshly grated Parmesan cheese, if wished.
