Stir-Fried Shrimp

Ingredients

1 clove garlic
2 tbsp (30 ml) light soy sauce
1 tsp (5 ml) sunflower or vegetable oil
Pinch grated galangal (optional)
Pinch ground coriander seeds
10 medium shrimp, peeled and deveined
1 green (spring) onion
1 tbsp (15 ml) lime juice
1 tsp (5 ml) chopped fresh ginger
Pinch sugar
Salt and freshly ground pepper
1 tsp (5 ml) fresh coriander leaves
1 tsp (5 ml) sesame oil
2 tbsp (30 ml) peanut or vegetable oil
1 zucchini (courgette)
1 or 2 mild or hot chili peppers

Method

Chop the garlic and combine with the soy sauce, sunflower oil, galangal, if using, ground coriander and 1 tbsp (15 ml) water. Stir shrimp in this mixture to coat, and marinate for 20 minutes.


Finely chop the green onion and fresh coriander, Mix with the lime juice, ginger, sugar, salt, pep­per and sesame oil. Stir in 1 to 2 tbsp (15 to 30 ml) water.


Slice the zucchini and cut the peppers into 1­ inch (2.5 cm) pieces. Heat the peanut oil in a wok. Stir-fry individual servings of the shrimp, zuc­chini and peppers for 2 minutes, adding marinade as needed. Serve with the lime sauce and rice.

TIP:- Galangal (pronounced guh-lang-gul), also known as Laos ginger, Siamese ginger and Thai ginger, is a rhizome often used in Southeast Asian cuisine. It is related to ginger, but it has a spicy, pungent flavor all its own.
