Spinach Gratin
Ingredients
1 lb (500 g) spinach
1 tbsp (15 ml) chopped pine nuts
6 to 8 fresh basil leaves
1 clove garlic
Salt
1 tsp (5 ml) lemon juice
2 tomatoes
Freshly grated nutmeg
2½ oz (75 g) mozzarella cheese

Method
Toast the pine nuts in a nonstick skillet (frying pan) on medium heat, being careful not to burn them. Finely chop the basil and garlic and combine with the pine nuts. Season with a pinch of salt and the lemon juice.
Wash the spinach and remove large stems. Place the wet spinach in a large saucepan and steam on medium heat for 4 minutes, until wilted. Drain and chop coarsely.
Preheat oven to 350°F (180°C). Grease an ovenproof dish. Slice the tomatoes and arrange in one half of the dish. Season with a little salt and cover with the seasoned pine nuts. Arrange the spinach in the other half Season with 2 pinches of salt and the nutmeg. Cut the mozzarella into 4 slices and arrange on top of the spinach. Bake for 10 minutes. Serve with Spelt Brioche.
TIP:- You can use frozen spinach instead of fresh. Simply thaw a 10 oz (300 g) package before following the directions above.
